Rock Bottom Restaurant & Brewery at 9627 E. County Line Road has closed. It opened in 1997 and spent nearly 30 years at Centennial Promenade. Westword included it in its openings and closings list on August 15, 2026. BusinessDen reported two days later that the national chain had closed both its Centennial and Highlands Ranch locations in recent weeks, which leaves one Rock Bottom brewpub in Colorado.
That makes it easy to read the closing as a sign this stretch is fading. The money moving in says otherwise. Within walking distance of the old brewpub, a winery restaurant, a relocated outdoor retailer and a 35,350-square-foot family entertainment park are all being built for 2027 or sooner. Each one is the kind of business people come back to again and again, and the city's own projections back that up.
A Furniture Showroom Becomes Two Storefronts
The biggest change is a few doors west of Rock Bottom. On July 21, Centennial City Council unanimously approved Resolution No. 2026-R-20, an agreement with B33 Centennial Promenade III LLC, the center's owner. It covers the redevelopment of the former Stickley Furniture space at 9511 E. County Line Road into two businesses: L.L.Bean and Cooper's Hawk Winery & Restaurant.
The Centennial Citizen's coverage of the vote includes the comparison that matters. City staff estimate the two businesses could produce about $17 million in combined annual sales, which would be more than the space generated as a single furniture store. According to city documents, the interior and exterior remodel involves more than $11 million in private investment.
The city documents also lay out what the deal is meant to do for the rest of the center, where World Market, Ross and Michaels are already tenants:
"In addition to generating significant new sales tax revenue, these tenants will increase customer traffic throughout Centennial Promenade, support neighboring businesses, enhance the quality and appearance of the center, and further establish Centennial Promenade as a destination for premier retail and dining experiences."
A furniture showroom is a trip most households make once every few years. The new building pairs a store with a restaurant designed for regulars, so one storefront that drew occasional shoppers becomes two that should draw people far more often.
What Cooper's Hawk Actually Is
Cooper's Hawk is the half of the building most people in Centennial will be meeting for the first time. City documents describe it as the brand's first Colorado location. WhatNow describes the concept as a restaurant, bar, tasting room and wine shop under one roof, with a 110-item American-fusion menu cooked in a scratch kitchen and meant to pair with the company's own wines.
The Wine Club is what makes the place work on repeat business. According to WhatNow, members get a curated wine every month, plus dining rewards, discounts and invitations to members-only events. A monthly pickup gives members a regular reason to come back to County Line Road, which is something a furniture store never did.
Work is visibly underway. WhatNow reported on August 29 that construction was well along and that the company had posted Centennial jobs for a restaurant manager, kitchen manager, restaurant office administrator and assistant executive kitchen manager. The Cooper's Hawk Centennial page now says the location "will be opening this winter!" and has a sign-up list for grand opening news and early reservations. The page doesn't give a date, so for now "this winter" is the company's goal, not a confirmed opening.
The firm deadline comes from the city agreement. Both tenants have to be open to customers by June 1, 2027. A 12-month extension to June 1, 2028 is allowed only for circumstances beyond their control. L.L.Bean is moving from Park Meadows into the other half of the building. City documents frame that as keeping the store in the local market. No construction start or opening date has been announced for it, so the June 2027 deadline is the only date on record.
Across Yosemite, a Second Bet on the Same Idea
Cooper's Hawk isn't the only new business on this corner that's built around repeat visits. On June 4, Launch Family Entertainment announced a signed lease for its first Colorado park, at the Yosemite Park Shopping Center in Centennial. WhatNow places the site at the northeast corner of County Line Road and Yosemite Street. That's a separate center from Centennial Promenade, but it's close enough to count as the same stop for most errands.
The plans describe a 35,350-square-foot building with bowling, an arcade, mini golf, trampolines, a mixed-reality playground, a soft play area for toddlers, and a KRAVE restaurant and bar. Ayush Agarwal, a Colorado-based entrepreneur originally from Boston, is leading the local development.
The opening date in the announcement isn't consistent. The release gives an anticipated opening in early 2027, with construction starting in August. A quote from Launch Chief Development Officer Mike Stout in the same release says the first Colorado park would "debut later this year." WhatNow's June 12 report, citing the Denver Business Journal, also gave early 2027. Early 2027 is the more reliable date, and a late-2026 opening would be ahead of schedule.
Put the two projects side by side and the pattern is clear. On the Promenade side, a furniture store becomes a winery restaurant with a monthly club. Across Yosemite, a retail center gets a bowling-and-trampoline park with its own bar. Both plans assume people will keep coming back to this corner and stay a while.

No replacement for the Rock Bottom space has been announced, so its spot on this list is still blank.
The Next Reason to Go Is Already on the Calendar
None of the new businesses has announced an opening date yet, but the Promenade already has a reason to visit this season. The independently organized Colorado Christmas Bazaar is set for two weekends at Centennial Promenade, November 28–29 and December 5–6. The organizer lists free admission and booths from local artisans and makers. The second weekend adds Stories & Cookies with Santa at 2 p.m. on December 6. This isn't a City of Centennial event, so check the organizer's listing before you go.
Shopping the bazaar in early December, you'll be a short walk from a building where Cooper's Hawk has said it hopes to open this winter, and from the dark storefront at 9627 that served beer for nearly three decades.
